Ever notice how hard it is to find just a regular chili recipe? I based this off a recipe that I found on allrecipes.com. It's yummy, and easy to make, too! (At least, it is if you're not like me and find out halfway through that your ex-roommate took the can opener.... *hugs Swiss Army Knife*)
Basic Chili
1 lb. ground beef
1 med. onion, chopped
2 cloves garlic, minced
1 T. chili powder
1 tsp. salt
1 tsp. oregano
1 can (14.5 oz) diced tomatoes, partially drained (you may use stewed tomatoes instead, if you prefer)
1 can (15 oz) tomato sauce
1 can (15.5 oz) kidney beans, drained
shredded cheese
sour cream
Combine ground beef, onion, and garlic in a large stock pot. Cook over medium heat until beef is browned, stirring often. Drain.
Stir in chili powder, salt, oregano, tomatoes, and tomato sauce. Bring to a boil. Reduce heat and let simmer, covered, for 1 hour, stirring occasionally.
Stir in kidney beans. Simmer uncovered for 20 minutes, stirring occasionally.
Garnish with shredded cheese and sour cream.
Makes 4 servings.
